How fermentation affects a plant<\/h3>\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t

The substances in plant material are not always equally available to the body. During fermentation some compounds can be broken down or transformed, so certain plant substances may become easier for the body to take up.<\/p>

For example, fermentation can reduce the amount of phytic acid in certain plant materials. Phytic acid can bind to minerals such as zinc, iron and calcium and reduce how available they are.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t
